Ingredients

Instructions

Toss sweet potato cubes with olive oil, salt, and pepper. Roast at 400ยฐF (200ยฐC) for 20-25 minutes until tender and caramelized.

Massage kale with a drizzle of olive oil and lemon juice for 2-3 minutes until tender.

Combine kale and roasted sweet potatoes. Top with pumpkin seeds, cilantro, and maple syrup if desired. Serve immediately.
