Instructions
01Sauté onions and garlic in olive oil over medium heat until soft. Stir in curry powder, cumin, turmeric, and salt, cooking 1 minute.
02Add lentils, tomatoes, and vegetable broth. Bring to a simmer, cover, and cook 25-30 minutes until lentils are tender.
03Stir in coconut milk and lime juice, simmer 5 more minutes. Garnish with cilantro and serve.
