👨🍳 Chefy Tip: Cook rice directly in the broth — draining it removes the starch that thickens the soup. Grate ginger on a microplane not a box grater. Finish with scallions off heat so they stay bright.
Add chicken broth, ginger, and garlic to a large pot and bring to a gentle boil.
Stir in jasmine rice. Reduce heat and simmer uncovered 15-18 minutes until the rice is tender and the broth turns slightly silky.
Add shredded chicken and simmer another 3-4 minutes until fully warmed through.
Stir in sesame oil and most of the scallions. Taste and season with salt and black pepper.
Ladle into bowls and finish with remaining scallions, cilantro, and a big squeeze of fresh lime.
Fresh ginger is commonly used in broths and teas because its bright warmth works especially well in lighter meals. Warm soup, soft rice, and savory broth can feel especially comforting on lower-appetite days.
