Instructions

Brown ground turkey in 1 tbsp olive oil over medium-high heat, 5-6 minutes. Season with Cajun seasoning, paprika, cayenne, salt, and pepper. Set aside.

In the same skillet, sauté onion, celery, and bell peppers in remaining oil for 5 minutes. Add garlic and corn, cook 2 more minutes. Return turkey and stir to combine.

Cook cauliflower rice in a separate skillet over medium heat with a pinch of salt for 4-5 minutes until tender.

Fry eggs in a touch of olive oil until whites are set and edges are crispy, about 3 minutes.

Divide cauliflower grits between two bowls, top with turkey mixture, place a fried egg on top, and garnish with fresh parsley.
